St Huberts

St Hubert’s in the Yarra Valley is a historic winery founded in 1862 by Swiss immigrant Charles Hubert de Castella whose early efforts helped establish the valley as a premium wine-region. The estate fell into decline during the early 20th century, but was re-planted in 1966 and played a key role in the wine renaissance of the valley in the 1960s.

Situated on gently sloping valley-floor vineyards in Coldstream, about 45-50 km east of Melbourne, St Hubert’s enjoys a cool climate with winter-dominant rainfall of around 750 mm a year and grey clay-loam soils underlain by clay. Winemaker Greg Jarratt, in charge since 2006, oversees production of cool-climate wines including Cabernet Sauvignon (long a signature of the site), Chardonnay, Pinot Noir and Roussanne, along with newer offerings such as sparkling rosé, Pinot Meunier, Pinot Blanc and reserve wines.

The property’s cellar door features a contemporary redevelopment opened in 2022, paired with a restaurant (Quarters), a boutique wine shop called Notes, tasting experiences and sweeping views over the vineyard, making it both a wine producer and tourist destination.
